Bali avo chocolate mousse…
I haven’t been able to get this raw avocado mousse out of my head since I first tasted it at Kumara in Bali. The cool creaminess mixed with the raspberry tanginess is so surprisingly mouthwatering. Quick, easy and healthy too. Enjoy!
Bali Avocado Chocolate Mousse
Ingredients for 2:
2 tablespoons raspberries
1 1⁄2 tablespoons honey
1⁄2 teaspoon lemon juice
1 teaspoon coconut oil
1 avocado
1 cup cocoa powder
1 vanilla bean
Preparation:
▪ Crush raspberries, add honey.
▪ Mix well and set aside.
▪ Combine avocado, lemon juice, cocoa powder, coconut oil in a food processor.
▪ Scrape seeds from the vanilla pod into the food processor.
▪ Blend until smooth.
▪ Put mixture in a bowl and put in the freezer for two hours to chill.
▪ When ready to serve, divide the raspberry honey mixture between two cocktail glasses.
▪ Top with two scoops of the frozen mousse.
